Can anyone help me find side dishes for a luau in Oklahoma?

I am getting married in September. My fiance and I have decided to have a luau for the reception with a whole pig. What we don't know is what kind of side dishes and/or appetizers to serve with it. We live in Oklahoma so a lot of the things that I have seen online are not readily available. Does anyone have any ideas or suggestions?
